This dark chocolate bar is made with beans from Rayen in Soconusco, Mexico and is sprinkled  with Pinole, an ancient mixture of roasted heritage corn and panela (brown sugar). Flavours reminiscent of coffee dominate while the soft fruit notes of the cacao beans shine through. The Pinole is sourced from Occentlalli in Mexico who are doing great work keeping many many different kinds of corn alive and used.
