Chocolate bars from our newest origin of Pinalum, Vanuatu

This community of neighbours in Pinalum on the tiny island of Malekula in the Vanuatu archipelago of the South Pacific are doing amazing work with their crop. Take a peek at the video to get a look at how much care and attention goes into harvesting their cocoa beans.

These neighbouring family farms work contiguous patches of land and team up together to send the beans to Sirene.

Sirene is now beginning to build a long term relationship with this community. I am really happy about this, and with these beans and the chocolate they produce. The chocolate made with them has a gorgeous caramel-y fudge richness, layered with cinnamon and allspice notes—with almost no acidity or tannins, just rich chocolate flavour.

I hope you enjoy them too!

This origin comes in both our 65% Dark Milk and our 73% Dark and I am hard pressed to figure out which I prefer.
